Does anyone know any Australian Science forums out there on the wonderful internet? Something like Whirlpool, although that's much more It/engineering focused.

Although it's not Australian (AFAIK), PhysicsForums is quite good for not only Physics but subjects such as Chemistry and others as well.

If Mathematics is what you're after, http://www.mathlinks.ro (aka art of problem solving) is one I used to hang out a lot on.

For med and other health fields (dent, pharm, nursing, etc.) or even if you're interested in that field, I'd recommend http://www.medstudentsonline.com.au/forum.php  (esp. for undergrad med and all others fields) or http://www.pagingdr.net/forum/index.php  (esp. for post-grad med only) :) Just note that the moderation is fairly strict and they don't take people posting about topics which have already been discussed once before lightly ;)
