Is it recommended to have only 1 prepared creative and adapt it to a totally new creative stimulus (this is what I see people doing)?

You should do whatever works best for you. Personally, I went in with one story in mind. Other students go in with two, or even three, in case the stimulus is completely out of left field. Honestly, this comes down to a personal choice, and your ability to adapt your story to strange stimuli. Decide what has worked for you in the past, and use that to figure out how you'll approach the HSC.

What do you mean by this Jake?

I didn't really prepare for a creative in the right manner back in prelim and have only learnt that (recently) most people write a creative then adapt it to the story

He means, like, a really strange stimulus. One that is abnormally specific, or difficult to interpret, perhaps :)

Didn't you say you could interpret it metaphorically Jamon (i.e. the faces going in)

Of course you can. If you feel confident in being able to manipulate a stimulus, one short story is plenty. However, if you are less confident, perhaps having two will increase your chances.

Exactly, even with metaphorical interpretation (which is what you should be doing), a stimulus can still be difficult to decipher (especially under pressure) ;D

Do you mean, an example of three different creative writing pieces?

Yeah  :D

You can literally write about anything. Having a look through the creative writing marking thread here will show you how diverse short stories can be!

Also how do I self learn the AOS discovery? I've tried to do that but I've found it difficult to self learn it

Learn about the AOS as Year 12 actually starts. Write whatever short stories you want throughout the year. Adapt them to the stimulus. Calm down.

does there always have to be a complication in the imaginative? cause mine at the moment doesn't really have a strong one, however the process of discovery is still there

Typically a narrative (short story, speech, poem, whatever) has a setting, complication, and resolution (not necessarily in that order). However, if you focus on a moment in time, there isn't always a complication. Or, if your focus is reflective, there's isn't always a complication. My question would be: how are you engaging the marker in that short time? If the discovery is there, you've ticked that box! Just got to be engaging to tick another criteria :)
