Heyy :) I did both psych and health in year 12 and loved them both and also got the same score for both so I can't necessarily say one is better than the other..But I'll just mention the "Pros" and "cons" of both:

Psych

Pros:
-> Psych doesn't scale down like health (and if you can get a high end score, it actually scales up by a little)
->There are soooo many resources for psych to practice with - there is no way you'll walk into the exam feeling under-prepared because there are just SO many questions/activity books/exams to do!
->It is extremely interesting! (being a bit biased here haha) but it truly is an interesting subject - you never get bored studying for it :)
->Psych (for 2012) will still have the mid-year exam, so it's less overwhelming as you get unit 3 done and over with and don't have to keep it in mind for the end of year exam
Cons:
-> Like most subjects, it is very heavily content based - so just dont leave things until the last minute and you'll be fine!
-> It can get a bit science-y in unit 3, which some people might find boring/difficult

Health

Pros:
->Amazing subject! I'm being biased here again but it really is an interesting subject if you're into health/nutrition/the world situation :)
->The information in health isn't difficult to grasp, which makes for easier memorisation of it
->You become really health-conscious (this has to be a good thing right?! :P) and I think it's good to know about health/certain diseases and stuff

Cons:
->Sometimes people take it thinking it's an "easy" subject and don't study enough for it I think or leave their study until way too late
->Unit 4 health can be a bit of a bore so it can go neglected (which isn't good because in 2011's exam, there were so many unit 4 questions!)
->It does scale down unfortunately (however if you can manage a high end score (i.e. mid-high 40's) it won't scale down by much, mine only scaled down by 0.7)
->There aren't as many resources in health as there are in psych unfortunately :( However, if you do a lot of questions and exam questions from your book and know your content well, you should be fine :D

Hope this helps! :)

I personally did neither of these subjects... but from feedback from friends, I would advise you to do psych...
Its a more solid/mainstream subject than health... but again it depends what you're after. If you need an easier subject to balance the workload, do health. If you're looking for a strong/solid subject that will form a base/top 4 subject, do psych...

Well i have done both subjects but I think psych would be a better choice. Reason being is that I find it more of a  rewarding subject, its fun, applicable in so many ways in your daily life which makes it easier to understand and remember .

Health I thought of to be slightly dry in terms of interest levels (subjective ofc.) and there is more rote learning involved than psych. Lots of people say that psych is about memorising too but I have never seen it that way.

And as mentioned previously, there is so so much resources out there for psych even if its a new study design. I mean we were the first year to have the new study design and that did not affect us at all.

When i done health it was also the first year for their new study design, and it was so limiting.. seriously the prac exams were like..scarce
