Would it be a good idea to just plan countless essays for different prompts and hope that one will match the exam prompt?

Plans are a great idea!
While your approach to hope for one that matches may be a little misguided, the benefit that a plan can afford is really just developing your skills in analysing/breaking down and addressing a prompt. So in that way, it's useful in the sense that come exam day, you'll be able to pick out 3/4 distinct ideas comfortably and quickly.
