Since it's not on the data booklet, do we need to commit to memory the complementary colours and the wavelengths at which they absorb? i.e table 7.4 on pg 85 of heinemann textbook.

No, just have a general understanding. You might be required to interpret the information if they give it to you.

There are seven, but the colour wheel splits the seven colours up.

oh i see i thought that logically, it would be split into 8 equal sections

Nah because red, orange and yellow are pretty much the same thing with just a few shades in between, which applies to indigo and violet also, which are like one each. And then three from blue and two from green.
I'm assuming it has something to do with the whole primary-secondary-tertiary colours system.
