Hi I was just wondering
is it worth doing every single question in the textbook? (blue and yellow chapter review questions)
and keep doing them (like twice, three times) to fully understand everything?
or is it better to move on to practice exams when you have finished doing textbook questions

Doing every question in the textbook is probably a bit inefficient in terms of time management; I like to think that once I can do a certain style of question, there's not much point in doing the same thing with different numbers, unless it's to reinforce the concept (unless spesh is your only 3/4, or if you're a mathematical prodigy :P). Even so, doing the whole textbook seems like overkill, let alone 2 or 3 times. My advice: once you've done the easier questions and you feel like you have the hang of the concept, try some of the harder questions to make sure you can tackle questions of all difficulties. I find practice exams a lot more helpful in gauging the style of questions you'll receive in the actual exam, rather than the textbook questions.

Do like, every second or third question imo.
I just try to do a bit of everything so I get a feel for each unique question they can ask me, because while a lot of questions can be applied in a number of way the approaches are in-fact finite.
For me adequate preparation involves being self-critical, knowing what I can do well and what I'm not strong with. My teacher gave us a trillion exam style questions and it helped me strengthen and link all the knowledge (application wise) so I'd recommend looking at past exams and extra resources!
