For an inverse graph, do I have to label the intersection?
And more generally, for the final exam, what is the bare minimum of features I have to label to get the marks? I've heard a lot of different answers ranging from label everything!! to only label what the question asks for so I'm not too sure...

For intersection, do you mean where the inverse and the original actually intersect? If so, no, just draw the inverse graph alone (unless VCAA want's you too but I haven't come across anything like this)
Bare minimum: x-int, y-int, any asymptotes, stationary points if they exist, your x & y axis, a decent scale (lol, don't have one x-int at 2 and the other which is 10 right next to it) and if given a restricted domain (which we normally are) include endpoints!
These are all expected by VCAA markers. I can attach some questions where not everything is required so you can see when enough is enough for a specific question :)

My memory is very foggy but from what I remember, in VCAA questions they will list everything you need to mark. Like they'll write "mark all x intercepts, turning points and end points". If the graph is worth more than 2 marks (on 1 function) then i'd mark everything. If it's 2 marks then you can just do what they ask, coz if you do something incorrectly you might lose marks. In your sacs mark everything coz sometimes there's this expectation (even though vcaa dont have it)
As I said I have a really vague memory of the methods qs so if someone knows otherwise pls update this thread

Yep, I'm not at my laptop rn or I would attach some really good examples. If it's a "sketch ..." then just label x & y ints and have good shape. These questions are usually 2 marks (3 sometimes) so they don't expect you to find stationary points.
If they tell you to "show all relevant information" or "mark key features" or something along those lines then you'd want to find stationary points, asys, endpoints etc.

Okay OP, here are some examples. You'll notice, as swag pointed out, VCAA will be kind enough to tell you what they're looking for in the question
And notice how they guide you, instructing you to find the stationary point of inflection for the first part of the question which helps you with sketching the graph in part b
For sketch 2, similar story, but they just want asymptotes and x & y ints. Always take note of the marks, one mark is usually allocated to correct shape

label whatever they ask for.
If your unsure look at how many marks it is worth.
If still unsure you probably haven't labelled enough so just add any extras.
For people doing spesh; even though hyperboles have been removed from the course as a stand alone topic it may still come up in complex numbers and the most common mistakes are forgetting to/not knowing that you need to label x and y intercepts of the asymptotes.
