I have a question regarding the shape of a numerical variable distribution: for box plots, do you disregard the outliers when discussing variability and skew/shape? I assume so but I just want to confirm because my book doesnt mention it specifically.

Yes, you ignore outliers when discussing the shape of the boxplot, but you need to acknowledge them (e.g. symmetrical with an outlier at ...).
In terms of variability, I'm not so sure, but I assume you don't need to talk about them. However, you definitely need to consider them when calculating the range.
