Both maintain a stable physiological environment for the body however allostasis does this by changing.

Allostasis revises and extends biological construct of homeostasis
Homeostasis is the body’s ability to maintain a stable physiological environment by keeping certain bodily conditions constant (body temp, blood oxygen level)
Maintained within a narrow range of values (‘set points’)

Allostasis helps the body to achieve stability by changing (e.g. increases heart rate to allow the body to function properly during times of high activity). It is like a thermostat in a centrally heated home that constantly adjusts to maintain a relatively stable temperature.
Homeostasis helps the body to achieve stability through staying the same (e.g. maintains core body temperature and blood oxygen levels).
