If I double the voltage, do I double the speed of the electroplating, or make it electroplate quicker or something else...?

You add more energy to each electron, which inherently makes the electrodes 'more' positive and negative. The charge will increase, which increases the forces on the ions in solution moving towards either electrode. In this, they will speed up in being attracted to either electrode, and I'd imagine that it contributes to making it quicker.

Don't really know, just using physics to try to suss it out. Confirmation anyone?

I think that's right. You could also consider the system as a resistor and use V = IR...
But your theory makes sense :D
