Ok so I don't know anything about how courses are structured at all and I was wondering if you guys could help me out
I know I want to go into either biomedicine or science and melb uni
What exactly are core subjects and how many of them do I need to do each year?
Which subjects are compulsory for either course and what are selectives?
If someone could also give me a run down on majors/minors and what they mean, that would be great

sorry for burdening you all with my cluelessness

most of your questions can be answered by looking at the website/handbook/booking an appointment, if you do sci, you need pretty much the same subs as the biomed kids (chem/bio/physics- i think)

sorry this isn't related, but I'm hearing that a lot of people have applied for scholarships, while I haven't applied for a single one, so where does that leave me compared to most others who have applied? What have I potentially missed out on by not applying?

Scholarships usually go to those with very high atars, like about 99.80+. Each faculty I believe have their own scholarships. If you don't think you're going to get that high then I don't think you're missing much.

As for your first question:

biomed:
first year format-
1 chemistry, 2 biology, 1 physics, 1 maths, 1 stats, 2 breadth

science:
first year format-
2 subjects each in 3 different science disciplines, + 2 breadth
An example would be, 2 bio, 2 chem, 2 physics. Or another example, 2 maths, 2 engineering, 2 psychology. It can be any combination, but people typically do bio and chem together or maths and engineering/physics together.

There are too many majors to list but you can find them on the handbook.
2012-2015 - Doctor of Medicine (MD) @ UniMelb
2010-2011 - Bachelor of Science (BSc) majoring in Pure Mathematics @ UniMelb
2009 - VCE [99.70] -- Eng [43] - Methods [44] - Chem [44] - JapSL [45] - Spesh [45] - MUEP Jap [5.5]

yeah will I can tell you right now I will be struggling to get above 98.00
This probably won't matter any way for me anyway, but I didn't have to apply for any scholarships to be eligible for a position in one of the Chancellor's Scholars' Program degrees at UoM, did I?

You only have to do subjects in BSc which are prerequisites for subsequent subjects which lead to/consist of your major. Of course your still subject to the basic requirements as listed in the handbook (search Science). As far as freedom goes in university you'll probably find most of it in the science course.
