Having a lot of troubling finding the origins of this proverb on google :(
I have, however, discovered when it was first published in print and by who (which isnt quite the same)

Anyone have any idea where it comes from (country)? Or who I should credit if I were to use it in an english context piece?
Or can I just make no acknowledgement to anyone?

I don't think you need to attribute it, it is a proverb, so it ought to go without saying that you didn't invent it. If you have to attribute it, attribute it to "English Proverb".
