oh panda! its very cute indeed, but the only con is that its way too popular. Why not pick something easy yet interesting? 小熊猫is good, its extremely likable and very Chinese. you could start the convo by saying
"两位考官您们好，今天我演讲题目是祖国的小熊猫。
如今，憨憨的大熊猫是人人皆知的中国国宝，然而，同样惹人喜爱的小熊猫却时常被人忽略。（take out your picture)
今天，我们就来了解一下中国的珍稀动物-小熊猫吧！" you could edit/paraphrase this a bit, its a rather special start that grabs your examiners' attention and interests :)

you could also do 金丝猴，华南虎，etc,etc

animals are good, the conversation's scope is often liimited to certain general areas and the amount of preparation required is quite satisfying ^_^
