i wouldn't be sure about the stats, but yes you can re-do the UMAT and apply for undergraduate and be considered a year 12 student if you take a GAP YEAR. if you begin a course you can still apply for undergraduate entry at the end of your first year and re-do UMAT that year. However you will be considered a non-year12 and therefore your entry would depend on GPA and UMAT not ATAR. Another point to note here is that there isn't many spots for uni students available, nevertheless you can still try

And about studying for the UMAT I personally would recommend that you start the practice booklets now and maybe just leave one of the acer ones for a week b4 the actual test. The other two know inside out, every single question, do it multiple times and alongside try indiabix website for section 3. After this attempt the last acer booklet in proper timed conditions and see how you go

Trust me I left my booklets till the last day and it wasn't good, so from experience I suggest use one of the acer booklets now to study and one to test yourself at the end (but don't leave this too late!).
That would be my approach anyway if i were to do it again, others may think otherwise
