Denaturing essentially refers to the destruction of hydrogen bonds. This occurs through the addition of heat, as in DNA during PCR (polymerase chain reaction) or through the addition of acids or bases. The acids and bases donate or 'steal' protons from the substance (DNA or protein, including enzymes). This means the hydrogen bonds holding the molecules together cannot form so the molecule cannot function.

Cold temperatures will not denature a protein. It's like those pracs where you have three test tubes with a reaction, each in a beaker of boiling water, room temperature water and ice water. The cold water slow the reaction down, but the reaction is still occurring. Same thing for enzymes. They're slower but they still function.
