I know that Chemistry papers get scanned and that we should write in pen so that it's legible, but is it OK to draw out structural formulae using pencil? When else is it OK to use pencil?

I guess you could draw the structural formula in pencil first and then redraw it in pen if you need to be sure

I got one of those new erasable pens which has worked really well, probably use that for the exam.

edit: incidentally, it's the black Pilot one with the grey sort of tribal pattern on it - I got another brand as well which was useless and rubbed off.

DON'T USE THE ERASABLE PEN IN THE EXAM!

The ink has been known to rub off in the presence of heat. After you've handed up your paper, you can't guarantee where that paper will go. I think the packaging also provides a warning that you can't use that pen for any legal documents or the like.

The most common brand, the Pilot® FriXion® Erasable Gel-Ink Pens (and its many associated trademarks), gives the warning:
Do not expose to extreme temperatures (<10   >60) degrees Celsius. So don't even breathe too hard on your exam afterwards :P

I'm kidding, just take care when using them. I would suggest a softer 2B that shows up darker rather than these fancy-schamcy erasable pens (for diagrams, pens for the rest) :))

LOL. A girl in my Chem class wrote with that Erasable Gel-Ink Pen for one of our SACS. By the time the teacher got around to marking her paper, half the ink had rubbed off and she lost a shit-load of marks :\
