the amount of theory we should have done by now?

I wouldn't panic. At this point you should be focusing more on your folio anyway. However, it would be beneficial to start researching two Artists (one before 1960's and one after) and pick two artworks to analyse from each. Make note of their technique, style, materials etc. You may also need to start learning about copyright laws but as their fairly easy to understand, it wouldn't be to your detriment if you left them til later.
