Can someone tell me when we use each of the graphical displays?
such as boxplots, stemplots, bar charts etc.

Boxplots: univariate numerical data. Parallel boxplots are used when investigating the relationship between one categorical & two or more categorical variables.

Histogram: univariate numerical data.
Stem-and-leaf plot: univariate numerical data
Dot plot: univariate numerical

Scatterplot is for observing the relationship between two numerical variables.

Time series is a relationship between a numerical variable & a time variable. Time is always the IV, and the points are joined by line segments.
