Hi Stone,

It really depends on how the syrup is made. If it is like making a caramel, and the syrup undergoes caramelisation then it is a complex process. This is because you have to judge when the sugar is caramelised enough without it becoming burnt - therefore your choice impacts the end of the product.

To clarify, are you making your own chocolate or tempering it?

I will be making the chocolate from scratch, and will make sticks out of them.

For the compote, first i prepare apples and put them in lemon water. Then i boil and simmer them with their skins and sugar. Later, the apples and skins are taken out. The liquid left is further boiled until it becomes more concentrated.

To finish, the apple is filled with whipped cream, decorated with chocolate and a mint leaf, and the syrup is poured over the dessert.

I thought that it would be complex, but my teacher is saying that compote is probably not.. confused..

I would argue that it is. A complex process is a process where a step you make influences the outcome of the product. So say you boiled the liquid too much and it burnt because of the sugar, that is a choice you made that has had a negative outcome on the product.

Saying that though, your teacher will mark your folio. If they don't think it is a complex process, maybe just say it isn't. You're already making your own chocolate, and you only really need to have one complex process per dish you make.
