Yeah like Mao said 久 can be used to show the extend/length of time.

Another way of saying "i have learnt chinese for 2 years?" could be "我学中文已经两年了".

Yes you are right, 次 is often used to say how many times you have done something, it is normally preceded by a number like 1, 2, 3, 4... etc

When is it appopriate to use 可以 instead of 会？
and whats the difference between using 想 or 要 ？

可以is used when someone is able/illegible to do something.  eg: 我可以睡觉，但是没有睡。I could sleep, but i didn't. 会is more suitable for times when something is certainly going to happen. eg: 有了太阳，花一定会开。想has two meanings. 1,thinking or missing something. eg: 他总是在想父母。2,want something. 我想吃饭。要is mostly used when someone wants/needs something, and could be used instead of 想. eg: 我要吃饭。   these are all i could think of atm. people feel free to add more :)
