i have always been interested in science (if that is of any relevance).
In my mind, that's the most relevant point in the topic.

Try not to think of it as, "I'm doing these subjects and so this is what I'm going to do with my life." I have a friend who did VCE chemistry, biology, IT, English, methods, and Japanese, and after that a bachelor of science in immunology and human pathology. Now he has a career lined up with a marketing team. The world is your oyster, don't feel locked in by what you're studying now or in the future.
But, if you think you like science, why not pursue a career in science? With an ATAR of 91, you'll probably get into any university's Bachelor of Science - all of them are generally below that (including Melbourne). You are at a slight disadvantage without methods if you can pick that up - if you can't, no big deal, that just means you can't immediately go to Melbourne. You can still take a course at, say, Monash, do a methods unit with them, and transfer to Melbourne, though.
Now, what career opportunities do you get with a Bachelor of Science? Welp, as I said up there, my friend got into marketing. Lots of astrophysicists get hired as accountants. You could also take the BSc and then do a masters in, say, teaching, engineering, medicine (yes, you can still get into these without doing methods now. Just do the bridging unit I mentioned earlier!) and get hired in of those fields.
However, the reason /I'm/ taking a BSc, is to become a /scientist/. Because, hey, you can actually do that.

Since you're in year 11, I'd recommend looking into
this program. Applications will open soon (usually in March), so I'd get on it ASAP. The big thing with NYSF is that it puts you near a bunch of kids who love science, already have grand ideas of what they want to do, and what their parents who already do science do. After you've talked to them, you then go to actual places that employ scientists, and you see what those scientists do (and sometimes even do it yourself!), so it's a fantastic opportunity for people who like science but have no clue what they want to do after! Not only is this program the reason I'm on my current career course (which I made a post somewhere on the forums about... You should look at that), but it's where I've made a lot of my current friends, and I had lots of fun while I was there!

You seem to have a good variety of subjects, although, if you're interested in a science course For Ex Bachelor of science, you may need to pick up Methods as it is a pre req for many science courses. Just something to take into account, It's always good to research using different university course handbooks online and see their requirements and what the course can provide you.
I wouldn't worry too much - you need methods for related fields, such as engineering, medicine and biomed, but a normal BSc only has methods as a pre-req at Melbourne. Everywhere else you can still do a BSc, and then just do the other degrees through a masters. (Except biomed. Just take bio units in your science degree. Pretty much the same thing)
