If I'm doing all maths/science subjects (and English of course), is there a point in me putting a lot of effort into the humanities/social science based questions? I ask because last year (when I just did it for biology), I was worried about timing so rushed the English at the start, and ended up with the very low score for it (22/40). I don't believe I'm particularly good at English anyway, but I think I could have gotten a better score if I spent a good amount of time on the writing pieces.

So basically, I'm planning that after writing starts I spend a good 45min-1hr on the writing section, then really try hard on the science/maths questions, then maybe skim through the humanities if I have time (I pretty much took the same approach to the multiple choice questions last year). 

So if I'm not doing humanities subjects, would getting a lower score in this session of the GAT, but decent in English, and good (hopefully) in maths/science, be the best opinion? Could the hums GAT session affect me in anyway if I'm not doing those subjects???

Yes, it could affect you in some way. It's important to note that whilst one particular area may influence more, the other sections aren't totally removed from the equation. See the reference from the VCAA website below:

Clearly, some GAT questions relate more closely to achievement in particular studies. The VCAA takes this into account when it calculates students’ expected achievements in each study for each school. For example, GAT results in mathematics, science and technology play only a minor part in calculating students’ expected achievements in humanities studies.

IMPORTANT: The GAT is only used in a rare circumstance. Please don't worry too much :)
