Welcome to AN Mitch. Further in terms of content is the easiest of the three (Methods, Specialist and Further), but is arguably difficult to get a high study score in once you reach Year 12 (competition is intense - since the content is easy, there isn't much that separates the top bunch apart from silly mistakes).
So to answer your question, I think it will be if you're finding maths easy at the moment. I would encourage you to start off with General Maths as this is basically a taste test for Further in Year 12.
I would encourage you to also consider Maths Methods as an option - the reason being that this is an extremely common pre-requisite for university courses and you limit yourself if you don't do it (there are other considerations such as the actual area you're thinking about entering as well).
