Hey. So the syllabus dot point says "process secondary sources to summarise the processes involved in the industrial production of ethanol from sugar cane".

Is the process they use on an industrial scale fermentation? Or is it something else completely? I can't find it in my textbook!

Hey! That dotpoint just summarises basically the rest of the topic; Sugar cane --> Cellulose --> Glucose --> Ethanol. So, you need to know about breaking cellulose into glucose, and fermenting glucose into ethanol, and potentially fractionally distilling ethanol into purer ethanol! That's all that dotpoint means.
