Does umat still apply if you take it this year (2017) and then take a gap year the following year in 2018 than go to uni in 2019

Since 2012 UMAT score is valid for only one year, you'll have to sit in 2018 to apply for 2019 intake.

A man came to talk to us about this at my school and he said you can apply for a degree, accept that offer, and then defer it and do it the year after. The UMAT would still be valid because you accepted it while the UMAT could still be taken into consideration. In saying this, I'm unsure whether you can defer an undergraduate medical place or not, but if it is, then you could definitely accept the offer, defer it, and come back to it a year later. :)

2018-22: Bachelor of Biomedical Science @ Monash Uni

That's true, UMAT is part of the selection process. If you are selected this year then take a gap year you won't need it again.

Most med schools do allow to defer a year if you request/apply for with a valid reason, something like travel for life experience, work to save up before moving from home etc.
