Do Arts subjects have exams? I have been looking through the handbook and it doesn't say anything about exams for the assessment of the subjects I am doing...

I don't go to Melbourne, but it more than likely differs from unit to unit. If you go to the unit's page in the handbook and press the 'Assessment' tab on the left, it looks like it lists if there's an exam there.

Edit: Just reread your post, looks like you knew about the assessment tab already! You can check if there's any reviews for the units in the subject reviews thread, or have someone on here check if there's exams in your units for you.

From my understanding, lots of arts subjects have essays due during the exam period in lieu of actual exams. If an exam isn't listed in the assessment section then you don't have to do one! But as www said, checking the subject reviews can definitely help, and then you can ask that poster specific questions in more detail, too

If in the assessment section it doesn't talk about exams, it doesn't have an exam. I'd say the majority don't really have a formal exam like you're used to in VCE, but it very much depends on the area you're pursuing.
