To put it straight, I don't like chemistry.
Biology and PDHPE are far more my strengths so i thought the biochemistry of movement would be a better option topic for myself however my teacher feels as though shipwrecks or industrial chem would be a better option for the class as a whole as most of them have not done biology or PDHPE.
Would it be silly for me to do biochemistry of movement independently. My teacher did it last year so he could still help if I were to get stuck in a particular area. I feel as though knowing biology and PDHPE are my strengths that I could get better marks if I were to do something that contains them.

I did the biochem of move option too, and I loved it!
Can definitely confirm that there is a lot of cross-over content between it and PDHPE and Biology. If you are good at working independently, then I think it would work in your favour to choose it, especially since your teacher has taught it before. The only problem is that there are not many HSC-focused resources, compared to the other options. Though you can still find a lot of science videos and websites that will definitely help.
Either way, decide what will work best for your learning style.
