if you have data as follows:
512 586 625 576 788 712 652 649 752 522 548 578
and it ssays to put the data in a stem and leaf in intervals of 50, with a key 5|78 = 578
would it be correct in assuming it to look liked:
5| 12 22 48
5| 76 78 86
6| 25 49
6| 52
7| 12
7| 52 88

Me too.  You've broken it up correctly by separating them into 5's and it looks good.
