What knowledge from Unit 1 Biology do we need to do Unit 2
And what knowledge from Unit 1/2 Do we need for unit 3/4

Unit 1 knowledge for Unit 2 - only very basic, because U2 is basically all about adaptations and so on, rather than looking at things at a cellular level. However - don't forget the stuff you learned in Unit 1, if you want to do well in Unit 3..it will make your life much easier to go into Unit 3 with a solid knowledge of cells and their functioning, so you don't have to relearn it in order to understand what is taught in Unit 3! :)

I think my school only ever offered unit 1, believing the knowledge gained from this unit would be sufficient enough to tackle 3/4.

Don't worry about it for Unit 2....but maybe get your teacher to give you a revision sheet in preparation about Unit 1, in preparation for Unit 3 next year. My school gives out a 'Foundation Concepts' revision sheet for students who are entering 3/4 without having done Unit 1, and it's very helpful. Unit 2 is quite irrelevant, to say the least. My school does Unit 2 first, and then Unit 1. What Nick's school believes is pretty much true!
