When we sub in a point either side of the the turning point, do we have to give a  exact numerical value of the graident or just putting a positive and negative sign is sufficient?

Put both. i heard they wanted the numerical value.

Yeah otherwise it wouldnt really prove that you did the calculations?

I reckon you set up the table of f'(x)
That has values for x either side of when f'(x)=0 giving exact values.

This will ensure full marks
