do they judge you on the subjects that you are willing to study?
i.e if you applied for uni maths? would they just look at your VCE maths results?

They look at everything, however for you preparatory/prerequisite studies such as Maths Methods or GMA in this case, you would need to have shown good skills in this area, maybe B-A+ average. Whereas in other areas such as Accounting, English, etc (all subjects that do not directly relate to your chosen area) you would not need great scores, only maybe C's.
