accepting, differing, rejecting offers...????? helpppp

Hey guys,
I feel like this is a really dumb question lol but can we accept more than one university offer?? Obviously we can differ as many as we want and reject or accept them later on. Today while meeting w my careers advisor she made me accept an early entry offer from ANU (wasn't even particularly interested in that degree.... ) now I'm kinda worried- what does this mean for the rest of my applications? Should I keep accepting any I get?
And with ANU in particular, my selection rank was quite high but the degree I got into was kinda iffy (flexible double degree), will I be able to use my selection rank again for ANU or would I have to apply through UAC now (using my atar)??
