I am completely hopeless when it comes to these topics. I've spent ample amounts of hours on this and have made next to no progress. The Edrolo videos are also pretty bad on this topic. Does anyone have any notes on this that could help me? you'd be a lifesaver!

This is one of my worst topics too,
Basically:
Structural changes include the growth of more dendritic spines (bushier dendrites) and eventually allow for extra synaptic connections between neurons. Other structure changes can include sprouting and rerouting.

Functional changes include and increase in the amount of neurotransmitter produced and greater effects of it at the post synaptic neuron.

Long term potentiation is also part of this section, it involves the longs lasting strengthening of neural pathways and as a result there is more effective and efficient communication in the future.
Hope this helps and good luck tomorrow!
