Sorry, but this question is quite vague. What do you mean by 'how is [it] done?' Are you referring to how marks are distributed? or how examiners mark the exam? If it is the latter, then here you go.
Assuming that English is marked similarly to the literature exams. Basically, two examiners will mark your whole exam and give you a mark out of how many marks the paper is out of x 2. EG: lit exam is out of 40. Both examiners mark it, they combine both their scores out of a total of 80. I am not too sure if this is the same for English, but because these subjects are similar in nature it's just an assumption.

Edit: I didn't realise that the post was titled 'exam remarking.' Please excuse what I have said earlier in the message.

With the literature exam, I know that if the two marks that the two assessors give vary more than the acceptable amount, it's marked a third time. This happened to a friend of mine and our literature teacher got to see her paper when it was being marked for a third time. :P If they still can't agree on a mark, then I believe the head assessor marks it. Or maybe the head assessor marks it in the 5th grading. Not too sure about that.

I'm sure English has a similar process.

For English (my Dad used to mark English),
each of your essays is marked by two different assessors (and different assessors for each essay, thus 6 people will mark your exam overall)
if the scores given out of 10 for the essay vary by 2 marks or more, eg first assessor gives a 9 and second assessor gives a 7, the essay is remarked by the chief assessor. his ruling is the final mark.
