I'm thinking of going for a trip at the end of my VCE. when do course interviews for Uni courses start, so I can be back in time?

Which course(s) are you interested in? Not all courses have interviews.

I was thinking of going into Mechatronics or Aerospace engineering. Do any of those courses have interviews?

Don't think so. Check with VTAC under the "Extra requirements" section. If it doesn't mention an interview, then you don't need to worry about it.
