What should I do if I can't be here during O week?

For some reasons I must leave Melbourne around those days and won't be back until 1st of March. This mean I will miss out the orientation sessions for Chemistry and Biology on 25th, as well as clubs sign up. Is there anything I should do about it?

Firstly, don't worry about it too much; any extremely important information is probably going to be unit-specific and thus not discussed too heavily at a general orientation session (though if you're unsure, you could always contact the schools/departments that run undergrad chemistry and biology for your course for any important information).

You can sign up with clubs during semester, just turn up to an event and talk to an organiser.
