Hey quick question:
why do starch and cellulose need to undergo hydrolysis prior to fermentation??

starch and cellulose are polymers of glucose which mean that they include many single glucose monosaccharides that are joined together. Hydrolysis splits this polymer so that glucose is free as a monomer which is required for glycolysis and subsequent conversion to lactate.

Adding to what Sine said, you must get these complex sugars into their monomers ie glucose via hydrolysis because the enzymes required for fermentation can only recognise glucose, not its polymers
