I think these courses exist (still undertaken by students) but aren't offered anymore.

You need to remember that 2007 was the last year before the Melbourne Model was introduced. A double degree can last for 6 years hence there will still be some people doing a double degree up until and including the year 2012.

Also because the Melbourne Model was introduced in 2008, next year will be the first year that people will actually enter the 2 years Masters Degree
Religion and Society (38), IT - Software Development (45) English (35), Chemistry (49), Methods CAS (48), Specialist Maths (50)
ENTER: 99.15

This.  I've met a few people doing double degrees in my tutorials and although rare, you'll still see some around.

If you search more deeply, the current handbook still has information about old courses and old subjects but explicitly state that they are no longer offered.

Just out of interest, in the previous double degree system at UoM, would you study one degree, followed by the next, or is it just 5 years with a mix of subjects from both degrees? And were there subjects like breadth subjects that you had to take from other faculties?

I believe it worked similar, if not the same, as Monash's current system.  For double degrees, you do them simultaneously and in the end you get a genuine double degree, eg. BSci/BCom.
