I'm averaging around 60% for practice exams, is this really bad?

Don't stress! Commercial exams are always harder/worded badly/dodgier than the actual one. I had 70% ish in my trial exams last year for bio and found the final exam much much better.
And what exactly are you losing the most marks in? Calculations or theory? Unit 3 or Unit 4? The best thing for you to do now before the exam is to look at your main areas of weaknesses, and work on them for Tuesday :)

Also, it really depends on what you're aiming for.
What SS do you want to get in Chem?

Here's also the grade distributions from last year for reference :)
