New Computer - any suggestions?

I'm planning a new build to replace my current computer which has served me well for the last two years. However, it's time for it to be replaced (and handed down to Glockmeister? :P).

This box needs to function both as my primary PC as well as a gaming rig. In particular, the multi-monitor setup will be used to run Microsoft Flight Simulator X (and therefore the two cards will not be SLI'd).

Has anyone got any suggestions or recommendations for change on the rig? My budget is 'unlimited' if the cost vs. benefit equation is good enough, but I'd like to keep it around where it is at the moment.

6gb Ram

I need two graphics cards as it will require four monitor inputs. Two GTX295s are a little excessive I think, especially if they're not able to be SLI'd.

@ Mao - I never really was a fan of AMD processors, so I'll probably stick with the Core i7 as I think Intel chips are better on that side of town. As for graphics card, unless someone can convince me otherwise (I'm really out of touch with them), I was under the impression that the Radeons were generally crap asides from the HD4890x2?

You can't SLI/Crossfire with more than one/two monitors, the drivers just don't support it.
