Breadtop became dead to me after I watched the baker knead the dough and wipe his nose on the same hand without wearing gloves. If you're going to have a clear pane of glass in front of the kitchen, you should make an effort to not look so gross.
I know what you mean.
The way I think about it, is when a company sets up a restaurant, shop etc allowing you to see how they work/cook it means they are confident in their hygiene, that is, it creates a peace of mind to me knowing they are less likely to be so dirty than if they worked behind walls in a kitchen
I absolutely hate it when people wear gloves but still do dirty stuff with it and then NOT change it....like its the exact same thing if u DIDNT wear gloves and worked with ur bare hands.
When u were gloves and are cooking, and pause to wipe ur nose, handle money etc, then CHANGE the gloves before u resume cooking again/kneading dough
