Say you 'think' you deserve more when you get ur exam results back (and hence, you want to improve your overall subject score). What's the general procedure to contest your marks? Like, do you just get a copy of your exam, and go 'dude, i'm right?'

Not sure about the policy with Monash but I would envisage it would be pretty much the same. Before your subject coordinator(s) fail you, a second person from the same department will look over your exam and judge whether or not the decision is final. If they agree, then the mark will be entered into the system and is final. You can request to see your exam, but since it's been checked by two experts in the department, if you've failed, then the most you can do is get your lecturer(s) to cry with you unfortunately.
With regards to exam viewing, it is possible at UoM. With the Department of Mathematics and Statistics, you are within right to view your exam paper after results have been released. Just shoot your subject coordinator an email and arrange for a mutually agreed time to view your paper. If, for some reason, you believe you deserve a higher mark because something wasn't marked correctly, or it wasn't marked at all, then it will be up to the discretion of the subject coordinator to change your mark.
With the Faculty of Commerce and Economics, I know that some subjects have scheduled exam viewing session that you register for and just like I mentioned above, you view your exam paper, calculate your marks, etc.
