Question: How do high fibre carbohydrate foods with low GI lead to a gradual increase in blood glucose levels?
The high amount of fibre in a food leads to a gradual increase in blood glucose, as if the food was only fibre then it would not affect the glucose levels, because fibre is not broken down by the body but as the food would have to contain something else eg a low gi cake would hve starch,
the other ingredient would be broken down by the body and therefore affect blood glucose levels but only leading to a graudual increase!.
Fibre also has been shown to reduce to the absorption of glucose the small intestine.
ok proper answer: The high amount of fibre in a food causes a reduction of the glucose from the small intestine leading to minimal increase of blood sugar compared to if a high gi product was consumed.
