I did 5 subjects total (all in year 12), and they were more down-scaling subjects than yours; I definitely achieved 85+.  Any set of 5 subjects can get you 99+ (if you're scoring ridiculously high, of course).  Like, raw 35 in each subject (assuming Psych) would get you exactly 90.00 according to ATAR Calc.

As for Psych, Further and Physics: this is the reality that is VCE Physics.  I'd personally recommend picking Psych, as just a generally fascinating subject, and then if you find you hate it for whatever reason, you can switch it for Further later.  If you're decent at maths and willing to work, I gather it's easy enough to pick up further (halfway through y11 or at the start of y12).

If you're thinking of commerce, have you thought about taking a commerce subject (accounting, economics, busman, etc. - if your school doesn't offer them, there's always distance ed) to see what it's actually like?  But then if you're interested in maths/science, why consider commerce?
