I would recommend either health or further for useful subjects.
Health teaches a lot of skills about how to stay healthy throughout life (i.e. making choices relating to diet and behaviours such as alcohol consumption, smoking, etc., interpreting health information, development, the healthcare system, etc.) which, in my opinion, are really usefull skills to use throughout life to ensure that you live in a healthy way.
Further, like Ionic Doc said, provides skills that are really useful for everyone, especially the financial topic, which you can use in the future to get the most out of things like loans and superannuation, etc.
Health does have a significantly heavier workload than further, however both have information that is generally easy enough to understand and interpret, and of course apply to life.
I have a friend that does legal and eco, and the content seems pretty interesting, and definitely applicable to life.
Check out the study designs for all of the subjects that you are interested in, and maybe even research some of the content that you would learn to get an idea of how useful it would be!
