I use exercise books for all my subjects, never loose leaf.

Same.  The only time I use loose leaf is if I forgot one of my exercise books at home or if the teacher is giving hints on the next SAC.

Since I always used one display folder for each subject, I would just chuck in 10-15 pieces of loose leaf at the back just in case for an emergency (or if I was bored and wanted to make paper aeroplanes when the teacher wasn't looking :P ).

So if I was to use exercise books this year, would people suggest I use a display book or something like a document wallet to hold my class handouts?

Yes, I would recommend using display folders; they come in different colours for different subjects and are inexpensive.  Great way to keep handouts and you can come back to them without any hassle.

definitely use exercise books (colourhide <3) and have one of those plastic pocket books for each subject.
works wonders.

i actually really dislike any other way to organise.

I used exercise books for Maths and Chemistry. Found it easy to use as the pages were permanently bound and obviously everything would be in sequential order, so notes wouldn't get lost.

Tried using looseleaf notes for English, but then everything ended up going everywhere. Eventually moved onto exercise books

For Chem, lots because my Chem teacher made me do the chapter problems.  Physics, on the other hand, I only used up one 64-page exercise book.  But that's only because I grew lazy and lost motivation after mid-years.
