The Bouverie st one? I had a couple of exams there this year, it's quite decent.

And as for summer subjects, search the handbook with the filter set to summer semester only

You can only do a maximum of 2 subjects in the summer semester.  Any more and you'll be overloading and you'll need permission from your student centre to do so.

Summer semesters aren't favoured by many students because it means giving up your January-February holidays to be at uni and if the temp rises to 40 degrees and you have an exam on that day in the Royal Exhibition Building, get ready to be roasted.

For the summer subs, exams aren't held at REB. It's in a random building down the Law building side of campus towards Swanston street.

Thank god because it would be overkill hiring such a massive venue for a relatively small number of students.

Don't worry about the dates too much.  Just wait until the offers come out and you'll get a whole bunch of papers.  Then once you've enrolled, you'll get a student diary.  Once you have that, all the dates will become as clear as day.
