Anyone know which universities offer the best courses for this? I'm not sure what sector I want to specialize in either, there's sectors like environmental, IT, engineering, science based project management

I think your best bet would be to do a general course in Managment or Commerce/Business.
That way you can go your own way after going into the different areas.

My aunt is an IT Project Manager. The pay is high, bit be warned, it can be stressful and the hours are long, and it isn't an entry level job; you'd need to have significant experience in your field of choice and sufficient credentials to qualify for such a high position. This could mean taking a PMP course or the like.
I won the GAT: 49/50/50.

This.

You can't just walk into a project management job because you have 'management' skills, if there is such a thing which is taught at uni. You need to have a technical background first and foremost. I can guarantee that you won't get a project management job in engineering if you don't have a B.Eng.

Not to doubt you guys or anything as such but there are degrees that specialise in project management. While i think it becomming say an engineer first then moving up into management would be a good way to go about it there probably are other ways.

RMIT for instance offers project management courses. I know very little about them so i won't comment on them much, however they are worth looking into.

Also, i think the defence forces have a project management/logistics style kind of job. It would look very good on your resume, you could just join the army/navy/air force reserves part time or something. They'd probably teach you a bunch of useful skills as well (for free).

Just do some more research and see what you come up with.
