Do two 3/4s. They're often more interesting than their year 11 counterparts. Psych and methods are both very different, but you can prepare for them if you put in the work. Both have a lot of prep books, and the style of learning is quite different. If you're mathematically inclined, go with spesh. If you like maths but it doesn't come naturally to you, do further. Don't worry about the scores needed for 90 now - focus on the individual subjects and do as well as you can in them. I got my own study scores completely wrong (predicted higher for some subjects, predicted lower for others), so don't bank on getting a 35 in this and a 40 in that.
In terms of subjects, I did:
2009: Physics and English Language
2010: Methods, English, French, Chemistry, UMEP Physics
Both of my year 11 subjects were used in my primary four; I got super involved in other things in year 12 (and as a consequence, missed a lotttttt of school - I don't think I attended 80% of classes). I'd definitely recommend doing two subjects in year 11 as it frees you up to do other things in year 12.
