If you want to do Undergrad Med in Vic - there's only Monash University. To be eligble/competitive for a spot you'll need around 95%ile to gain an interview spot (this year's results, it's been rising every year), you'll need to do well on the interview and the Median ATAR for Monash MBBS.. well I keep hearing 2 figures - either it's 99.60 or around the 98.00 mark - those are the two figures I keep hearing (yeah, all my friends are med hopefuls..)
IMO easiest entry into MBBS in Australia would be University of Queensland - Achieve a 50/50/50 in sections 1 , 2 , 3, get an ATAR of 99.00 or (97.5 if you do LOTE/Spesh Maths - can be even lower if you do a combinations). There is no interview.
That's the universities I know in detail. I'll leave the other ones to someon else.
If you don't think you can get a high enough ATAR/UMAT - there are some Universities that put much more emphasis on the interview and application form like JCU.
A lot of MBBS Uni's will require high ATAR's.
